Leve is made in partnership with La Cofradía, a family-run distillery in the heart of Jalisco that has been crafting award-winning agave spirits for over 50 years. Every bottle of Leve begins just like a great tequila, with time, care, and craftsmanship, before our Master Blender José Sánchez applies our own twist to reimagine how it can be enjoyed — at 22% ABV.
Agave, Handled with Respect
We use only 100% Blue Weber Agave, harvested at peak maturity and weighing between 30 to 70 kg. The piñas are carefully selected for both sugar content (at least 23 Brix) and uniformity, setting the stage for balanced flavour and smooth complexity.
Slow Cooking, the Traditional Way
Our agave is slow-roasted in brick ovens for 42 hours, then rested for 8 hours. This gentle, low-temperature method (90–100°C) helps convert inulin into fermentable sugars without caramelising the agave, keeping the flavours clean, soft, and true to the plant.
Juice Extraction, with a Light Touch
We extract the agave juice using a mill, which allows for high juice recovery while minimising fibre breakdown, a crucial step in preserving the subtle vegetal notes that define great agave spirits.
Fermentation, Left to Nature
Fermentation begins with juice from the first mill run, and nature takes over from there. On average, the fermentation process takes about 72 hours and remains uninoculated by yeasts, allowing a sense of place, and flavour, to shine through.
Distillation, Doubled
Leve is distilled twice using stainless steel alambiques with copper serpentine condensers, a process that keeps the spirit clean, smooth, and expressive. Each run takes 4 to 6 hours, allowing ample time to develop and refine the character of the spirit.
The first pass, known as the ordinario, produces a bold, lower-strength raw distillate full of rich agave flavour. The second, called the rectificado, carefully purifies and elevates the liquid into the clean, nuanced base that becomes Leve.
Rested to Reveal Character
For our Reposado expression, the liquid spends six months resting in ex-bourbon barrels. We evaluate the result not only by colour, but by how well the wood complements the agave, giving just enough oak, spice, and vanilla without overwhelming its roots.
Filtration, Reimagined for Clarity
After distillation, Leve undergoes a meticulous filtration process — not to weaken the spirit, but to reveal its hidden depths.
Through intense experimentation, our master blender José Sánchez perfected a conscious approach that enhances flavour while softening intensity. By identifying the precise carbon type and particle size, we’re able to purify the spirit in a way that elevates delicate aromas and allows the natural nuances of the agave, earth, and soil to shine.
This process is completed using volcanic well water drawn from the slopes of the Tequila volcano, reinforcing the connection between land, flavour, and spirit. The result is a clean, complex agave expression with unexpected layers, crafted for those who want a little more clarity in what they drink, and how they feel after.
